How to Make Dal Baati

Recipe by Naiya Sheth: Dal Baati is a very well known Rajasthani recipe. It can be said that talk of rajasthani food is incomplete without mentioning Dal Baati. Basically in authentic recipe of dal baati they were used to add lots of ghee in dal. And baties had to be fried in ghee - clarified butter . But now a days baked and boiled batis are also available. So, in that way now dal baati is a very delicious and healthy recipe, because lots of dals are used in this recipe. Basically batis are soaked in ghee for minimum 30 minutes and lots of ghee has to be poured on dal also. But I tried to cut that soaking and pouring of ghee to avoid fat. And believe me it is very delicious as the authentic dal bati recipe. So try this mouth watering rajasthani recipe of Dal Baati during this winter. Enjoy cooking!

Dal Bati


Preparation time - 10 to 15 minutes
Cooking time - 15 to 20 minutes
Baking time - 10 minutes
Makes - 6 small baatis (2 person)

Ingredients to make Dal Bati:

For baati:

1/2 cup coarse whole wheat flour
(I used home made multi grain coarse flour)
1/8 cup regular whole wheat flour
(again I used multi grain flour)
1/2 tea spoon ajwain
Salt to taste
2 tea spoon ghee
2 tea spoon oil

For dal:

2 tea spoon oil
1/2 tea spoon cumin seeds
1 tea spoon crushed ginger
1  tea spoon crushed garlic
2 to 3 tej patta
1/2 tea spoon chopped green chilli
1 medium onion finely chopped
Salt to taste
1/4 cup soaked and cooked green mung dal
1/4 cup soaked and cooked yellow mung dal
2 to 3 table spoon  soaked and cooked toovarr dal - arhar dal
2 to 3 table spoon soaked and cooked chana dal - gram dal
1 table spoon red chilli powder
1/2 tea spoon turmeric powder
1 table spoon cumin coriander powder
1/2 tea spoon garam masala powder

To serve with:

Crisp salad
garlic chutney
Ghee (opt.)

Crisp salad:

1 table spoon finely chopped cucumber
1 table spoon finely chopped onion
1 table spoon finely chopped tomato
1 table spoon finely chopped coriander
Salt to taste
1/2 cup masala bundi
1/2 tea spoon red chilli powder
A pinch dry mango powder
1/4 tea spoon lemon juice


Method to make Dal Baati:

For Baati:

  • Mix all ingredients of baati and make hard dough with the help of water.
  • Make 6 equal size baati and bake in preheated oven at 160`c temp. for 10 to 12 minutes with both top and bottom grill on. ( I made small baatis to cut baking time.)
  • When ready remove from oven and keep a side. (At this stage you may soak in ghee, which I did not.)

For dal:

  • Heat oil in a pan and add cumin seeds to it. When they crackles add garlic, ginger and chilli paste. Cook for2 to 3 minutes at slow flame.
  • Now add onion and again cook for 2 minutes.
  • Add dry spices and cook for 1 to 2 minutes at slow flame. Now add 1 sufficient water and let  it boil for 5 minutes.
  • At last add cooked dals to it and mix well.
  • Again cook for 5 to 7 minutes covered.
  • Dal is ready.

For crisp salad:

  • Mix all ingredients in a mixing bowl.

How to serve Dal batti:

  • Serve hot dal and crumbled baati with crisp salad.

Tips:

  • In stead of whole wheat coarse flour combination of whole wheat flour and yellow corn flour (coarse) also can be used.
  • Ghee can be poured at the top of hot dal.
