South Indian recipes are loved by everyone. Here it’s a home made recipe for a famous south Indian Medu Vada with sambhar and coconut chutney. It is tricky but after some practice it will be easy to make restaurant style Medu Vada at home. 

Even machines for making vada is available at market for beginners.  We made this recipe on kali chaudas - Diwali also. Mixing of two dals makes it crisp from out side and softer inside. Medu Vada Recipe

Soaking time - 5 to 6 hours
Preparation time – 15 minutes
Cooking time – 45 minutes
Serves – 4 people

Ingredients to make Medu Vada:

2 cups urad dal
1 cup urad dal (black lentils)
2 tablespoon moong dal
2 tablespoon rice flour
2-3 green chilies, finely chopped
1-inch piece of ginger, grated
A handful of fresh curry leaves, finely chopped
1 small onion, finely chopped (opt.)
1/4 cup fresh coriander leaves, chopped
Salt to taste

Oil for deep frying

Method to make Medu Vada:

·       Rinse the urad dal thoroughly under cold water until the water runs clear.

·       In a large bowl, add the dal and cover it with enough water. Allow it to soak for at least 4 hours. Soaking the dal helps in making soft and fluffy vadas.

·       After the dal has soaked well, drain the water completely.

·       Transfer the soaked dal to a blender or a wet grinder. Grind the dal to a smooth and fluffy batter, adding a little water if necessary. The consistency should be thick, similar to pancake batter.

·       Transfer the batter to a mixing bowl.

·       Add chopped green chilies, grated ginger, finely chopped curry leaves, onions, salt and coriander leaves.

·       Mix all the ingredients thoroughly, ensuring the flavors are well distributed throughout the batter.

·       Heat oil in a deep frying pan on medium heat.

·       Take a small bowl of water and keep it nearby. Wet your hands with water before shaping each vada to prevent sticking.

·       Take a golf-ball-sized portion of the batter and flatten it slightly on your palm.

·       Make a hole in the center using your thumb to create a donut shape.

·       Gently slide the shaped vada into the hot oil, frying 3-4 vadas at a time (or as many as your pan can comfortably hold).

·       Fry the vadas until they turn golden-brown and crispy on both sides. Ensure they are cooked evenly.

·       Remove the fried vadas from the oil and place them on a plate lined with paper towels to absorb excess oil.

·       Serve the Medu Vada hot, along with coconut chutney, sambar, or a delicious green chutney for dipping.
